Choose a recurring process where the same records, roles and decisions appear every week. Write the current inputs, the person responsible for each transition, and the output that tells you the work is complete. That gives you a testable boundary for an internal app.
Then prototype only that loop. A useful first release might replace purchase-request email chains, centralize an inventory movement log, or give clients one controlled place to submit and track requests. If the prototype cannot remove a specific manual handoff, adding more screens will not rescue it.
